chicken and dumplings are about as comforting as they come 🤭🤎 Easy Chicken and Dumplings 🥣 Ingredients: Chicken Soup: 4 tbsp butter 1 medium onion, diced 3 carrots, peeled and sliced 3 celery stalks, sliced 3 cloves garlic, minced ⅓ cup all-purpose flour 6 cups chicken broth (bone broth preferred) 2 cups heavy cream 1 Parmesan rind 1 tbsp garlic powder 1 tbsp onion powder 1 tbsp poultry seasoning 1 tbsp dried thyme salt and black pepper to taste 3–4 cups shredded rotisserie chicken ½ cup grated Parmesan cheese Fresh parsley (optional) Dumplings: 2 cups all-purpose flour 1 tbsp baking powder 1 tsp salt 1 tsp garlic powder ½ cup grated Parmesan cheese ½ cup shredded mozzarella cheese 2 tbsp chopped parsley 1 cup milk ½ cup (1 stick) butter, melted Directions: Cook the veggies: Melt the butter in a large pot over medium heat. Add the onion, carrots, and celery and cook for 7–8 minutes, until softened. Stir in the garlic and cook for 30 seconds. Make it creamy: Sprinkle the flour over the vegetables and stir for 1 minute. Slowly pour in the chicken broth, stirring well. Add the Parmesan rind, poultry seasoning, thyme, black pepper, and salt. Bring to a gentle simmer and cook for about 15 minutes, until the vegetables are tender. Remove the Parmesan rind. Stir in the half-and-half, Parmesan, and shredded chicken. Make the dumplings: In a bowl, combine the flour, baking powder, salt, garlic powder, Parmesan, mozzarella, and parsley. Stir in the milk and melted butter just until a soft dough forms. Do not overmix. Cook the dumplings: Bring the soup to a gentle simmer and drop spoonfuls of dough over the top. Cover and cook for 15 minutes without stirring or removing the lid. Remove the lid and cook for another 5 minutes, or until the dumplings are cooked through. Let sit for 5–10 minutes before serving.
