@chefkeithsarasin: Did you know that this classic Indian street food was created because of the American civil war? Food with a side of history. #chefkeithsarasin #aatmaatwidowmaker

As an indian that loves and cooks indian (and mexican) food i have an insane aversion to cilantro (as lots of people do). Makes it very difficult to eat out at restaurants as so many things are premade ahead of time. Ugh. 🌿

So we owe pav to the Portuguese and pav bhaji to the Confederacy? Great! 😁 Tangential comment: I heard that you could order batata pav in Bombay or São Paulo and get more or less the same basic ingredients: bread and potato.

This is revisionist history oriented around the American/western sphere that’s been entirely debunked. Bhaji was already a native dish eaten with roti or Bhakri street side (Mughal texts proved this street food was already prominent prior to British “industrialization”. The Mumbai cotton industry already took off 20 years prior to the civil with the creation of the Mumbai cotton stock exchange in 1840. The civil war didn’t create the industrialization of Mumbai nor was it long enough to have a lasting impact on India’s industrialization of cotton which was already mature in Deccan Plateau. I understand you love Indian food — but clearly appreciation isn’t enough if you can’t recognize why a video like this is dismissive of India which has struggled with historians writing it off as a footnote of western history.
