Crispy Salt Bread Bagels  🥯 Recipe  Makes 8 Tangzhong * 22 g bread flour * 60 g water * 60 g whole milk Dough * 7 g active dry yeast * 155 g whole milk, warm * 10 g sugar, for blooming the yeast * 9 g melted butter * All of the tangzhong * 375 g bread flour * 40 g sugar * 1 tsp salt * 60 g softened butter, salted or unsalted Filling * 200 g cold salted butter, divided into 8 portions of 25 g each For boiling + topping * Large pot of water * 1 heaping tbsp baking soda * Milk, for brushing * Pretzel salt or coarse salt Method 1. Make the tangzhong: Whisk the flour, water and milk together in a small saucepan. Cook over medium-low heat for 2–3 minutes, whisking constantly, until thick and paste-like. Transfer to a bowl and cool completely. 2. Bloom the yeast: Combine the warm milk, yeast and 10 g sugar. Let stand for about 5 minutes until active and foamy. Stir in the 9 g melted butter. 3. Make the dough: Add the cooled tangzhong, bread flour, remaining 40 g sugar and salt. Mix into a shaggy dough, then knead for about 3 minutes. 4. Gradually knead in the 60 g softened butter. Continue kneading until the dough is smooth, springy and elastic, about 10–15 minutes in a mixer or longer by hand. 5. Place in a greased bowl, cover and proof somewhere warm for about 60–90 minutes, or until doubled. 6. Divide into 8 equal pieces, shape into balls, cover and rest for 15 minutes. 7. Fill + shape: Roll each piece into roughly an 8 x 5-inch rectangle. Place 25 g very cold salted butter, cut into small sticks, along one edge. Roll tightly around the butter and seal the seam and ends well. Shape into a ring and firmly pinch the ends together. 8. Cover and proof for another 30 minutes. 9. Heat oven to 400°F. Bring a large pot of water to a boil and add the baking soda. 10. Boil each bagel for 15 seconds per side. Drain well and transfer to a lined baking sheet. 11. Lightly brush with milk and sprinkle with pretzel salt. 12. Bake at 400°F for 15 minutes, then reduce to 350°F and bake another 10 minutes, until deeply golden and crisp. 13. While they’re still hot, brush the tops with any salted butter that has melted onto the baking sheet.
