i forgot how making a simple loaf of bread can be so therapeutic…(also i know it’s not perfect but it doesn’t really matter!) you'll need: - 250g dark rye flour - 250g strong white bread flour - 7.5g dried instant yeast - 10g fine salt - 2tbsp olive oil (plus extra for greasing) - 300-400ml warm water (you may not need it all!) (to serve): - salted butter - honey method: 1. begin by pouring the olive oil, half of the water, yeast and flour into a large bowl. 2. add the salt on top (it's important the salt and yeast don't directly touch at the start!). 3. mix using a large spoon and add the water gradually until it comes together into a dough. 4. place the dough on a lightly oiled surface and knead for about 10 minutes. 5. it may be quite sticky and difficult to make it 'elastic' as rye flour is not the easiest so don't worry! 6. once it's become a roughly elastic ball, pop into an oiled deep bowl and cover with a tea towel. 7. leave in a warm place for at least an hour or until doubled in size. 8. place the risen dough on a clean work surface and punch all the air out (this will be very satisfying). 9. bring each corner into the centre and flip the dough over. 10. cup your hands under the dough, twist 90 degrees and form into a neat ball (you may need to cup and turn a few times). 11. pop the dough onto a lined baking tray and cover with a tea towel. 12. leave to rise for another half an hour. 13. meanwhile, preheat the oven to 220c. 14. remove the tea towel and make 3 incisions using a very sharp / ridged knife. 15. sprinkle with a little flour (optional) and bake the bread for 30 minutes. 16. remove from the oven and allow to cool for at least 10-15 minutes before slicing... 17. slice and serve with salted butter and a drizzle of honey...or however you like! enjoy xxxx  #bread #breadtok #homemadebread #baking
