Lowering the starter percentage in my sourdough might have actually done exactly what I wanted it to do. This loaf was made with 10% starter instead of my usual 20%, and because I got busy this week, it ended up cold proofing for about 48 hours instead of overnight. The tang is DEF there y’all 🙌🏾!! I’ve done super long cold proofs before and never noticed this much sourness, so I really think lowering the inoculation played a big role here. Next experiment, I wanna drop it down to 2–5% starter and see if I can push the tang even further. For those of y’all who like a really tangy loaf, what’s your favorite way to develop more sour flavor?
