The easiest way to put down the whole argument of why the Hulk stopped is that, it wasn't Banner. It was Hulk deciding to stop hurting a friend. Hulk felt guilty and doesn't like being seen as a monster (hence looking at his reflection in the movie). It's a callback to his decision in Age of Ultron to leave the planet due to the guilt he felt after his rampage caused by the Scarlet Witch. People tend to forget that Hulk isn't just mindless and is his own separate personality with feelings other than rage.
