what I love most about that scene is he lacks the confidence throughout the first flight until they are falling out of control. and when he is in fog barely able to see anything and his cheat sheet is useless he makes the decision. To trust his instincts and to be confident in his choices. This is the moment we first get a glimpse of the future chief of berk. A leader doesn't know if what they are doing is the right thing but for the sake of those they care about they will take action with conviction and that is what hiccup did in that moment. its beautiful and glorious.
