Crispy rice tuna salad that proves healthy food doesn’t have to be boring. Packed with high protein tuna to keep you full and fueled between meals balanced with fiber-rich ingredients for digestion, steady energy, and protein packed to keep you full longer.  🗒️ INGREDIENTS  1 cup rice of choice (pre cooked, cooled) (125g) 1 tbl soy sauce (15g) Small amount of chili crunch (3g) Splash of sesame oil (3g) Rices seasoning: Salt and onion powder 2 cans, drained @safecatch elite pure tuna ( 1 1/2 tbl light mayo (15g) 1/3 cup 0% Greek yogurt (76g) Tuna seasoning: dash Smoked paprika, Salt   1/2 cup shelled edamame (65g) * little under 1/2 Sriracha, Sesame seeds to top after Process: Pre heat oven to 400°.  Cook your rice as prescribed by what you’re using. I used an instant cup of rice 🤷🏼‍♀️. Add soy sauce, chili crunch, sesame oil and rice seasonings. Mix well on a lined sheet tray and add to the over for 20 ish minutes or until crispy.  While the rice is baking, drain your tuna and add it to a bowl. Mix with your mayo, Greek yogurt, and tuna seasonings.  I did mix around the rice at around 15 minutes as one side was getting crispier than the other.  Once the rice comes out, let it cool a bit, crumble and add to your bowl with your tuna salad and top with sriracha and sesame seeds.  It’s such a fun way to elevate your tuna salad all while getting in good proteins, carbs and not to mention FIBER.
