today is the last day of this series…until next time grandpa🤍  (makes 12-13 pierogi) you'll need: - 2 cups plain flour - pinch of sea salt - 80ml vegetable oil - 150ml (+ more if you need) lukewarm water - 200g fresh blueberries (or jagody if you can get them!) - 2tbsp brown sugar - 1tbsp cornflour (to serve): - double cream & sugar method: 1. begin by placing the flour and sea salt in a medium sized bowl. 2. mix roughly with a wooden spoon and make a well in the centre. 3. pour the oil in and some of the water. 4. mix and keep adding the water gradually until you form a dough. 5. knead on a work surface for about 5-10 minutes until smooth and elastic. 6. wrap in some cling film and leave to rest for a little while. 7. meanwhile, mix the blueberries, sugar and cornflour in a seperate bowl. 8. roll the dough out until about 2mm thick and using a 3inch (7.5cm) round cutter, cut out a circle of dough. 9. stretch a little in your hand and place about 1tbsp of blueberries, or about 5-6 blueberries (depending on how big they are!) into the centre of the circle. 10. lift the bottom flap up and over the blueberries and pinch the edges together with your thumb and index finger. 11. it should look like a semi circle dumpling now! 12. repeat with the rest of the dough and place the pierogi on a tea towel as you go. 13. now, pinch the edges with the end of a fork for extra security! 14. fill a large saucepan with water and bring to a boil. 15. using a slotted spoon, place about 6-7 pierogi into the water (carefully!) and ensure the water is bubbling at all times. 16. boil the pierogi for about 2-3 minutes or until they have all risen to the top. 17. remove the pierogi from the water using a slotted spoon and place on a plate. 18. repeat with the rest of the pierogi... 19. serve whilst warm, sprinkle with some sugar and a pouring of cream… enjoy xxx🥹🤍 #pierogi #dumplings #polish #EasyRecipes
