i’ve given up trying to be simple i’m sorry🩵 (for the lemon & coconut chia pudding) you’ll need: - 50ml coconut milk - 1 heaped tbsp greek yogurt  - zest of 1/2 a lemon - juice of 1/4 of a lemon - 1tbsp honey  - 1tbsp chia seeds  (for the pistachio & coconut granola): - 1/3 cup oats  - a small handful of chopped pistachios  - a small handful of flaked coconut - 1tbsp butter  - 2tbsp honey / maple syrup  (to serve): - any yogurt you like (i use @FAGE 5% forever) - fresh strawberries, sliced  - smooth almond butter (i use @Meridian | Nut Butter of course) - desiccated coconut  - extra chopped pistachios (optional!) method: 1. begin by combining the coconut milk, yogurt, lemon zest, lemon juice, honey and chia seeds in a small bowl and mix until thoroughly combined. 2. pop in the fridge for at least half an hour whilst you prepare the rest. 3. toss the oats, pistachios and flaked coconut into a small frying pan. place on a medium heat. 4. add in the butter and honey / maple syrup and stir to combine - ensuring the oat mix is covered evenly. 5. keep stirring every now and then until the granola is golden. push the whole mixture to one side of the pan in a flat layer.  6. remove from the heat. 7. begin assembling your bowl by placing your yogurt of choice in a bowl (mine is from @FANI STUDIO 🩵), followed by the chia pudding on top! 8. layer with some sliced strawberries (or raspberries go well too!). 9. break up the granola into clusters using a wooden spoon and spoon however much you like into your bowl. 10. add a generous dollop of almond butter and then a sprinkling of desiccated coconut. 11. top with extra chopped pistachios of course… enjoy xxx🍋 (for anyone who remembers the video with grandpa, this is the chia pudding he had in his first yogurt bowl!)  #yogurt #yogurtbowl #lemon #chiapudding
