These easy yet elevated mashed potatoes are sure to be a winner at Thanksgiving and the best part is they come together with only a handful of ingredients 😋👏🏽 Serves: 6  1 large head garlic 1 tsp olive oil 2 pounds potatoes (red or gold work) , washed and cut into quarters 1 stick of salted butter  3/4 cup heavy cream Salt and pepper to taste Fresh parsley or green onions, for garnish Preheat oven to 375 F. Roast the garlic – cut the top 1/4 inch off of the garlic head. Drizzle olive oil over the garlic and wrap the garlic head in foil or parchment paper. Roast for 1 hour, or until the garlic is very soft and golden. Meanwhile, boil the quartered potatoes in a large pot or dutch oven making sure to salt your water! About 1 tsp should be good. Simmer for 15 minutes or until fork tender. Drain and return to the pot. In a small pot over the stove, carefully warm the heavy cream and butter until butter is melted. Don't turn the heat on too high to prevent curdling. Add the butter mixture to the pot with the potatoes, along with the roasted garlic, and salt and pepper to taste. Mash until milk and butter are incorporated and potatoes are a creamy consistency with some lumps.  Garnish with fresh herbs and more butter and enjoy! #mashedpotatoes #thanksgivingrecipes #thanksgiving #EasyRecipe #thanksgivingdinner
