It has been the drink of cold mornings, posadas, and Día de los Muertos altars for generations, the kind of thing that shows up alongside tamales because the two were basically made for each other. What makes champurrado different from regular hot chocolate is that masa base. It gives the drink real body, almost like a drinkable pudding, and it means one steaming mug actually fills you up. It takes patience and a lot of whisking, but there is no shortcut that gets the texture right. Serves 6, total time about 35 minutes INGREDIENTS 4 cups water 1 cinnamon stick (about 3 inches) 1 piloncillo cone (about 3 oz), or 1/2 cup packed dark brown sugar 3/4 cup masa harina 1 cup cold water, for the masa slurry 1 cup whole milk 3 oz Mexican chocolate tablet (such as Abuelita), chopped 1/4 teaspoon salt 1 teaspoon vanilla extract INSTRUCTIONS 1. In a medium saucepan, combine the 4 cups water, cinnamon stick, and piloncillo. Bring to a gentle simmer over medium heat and cook about 10 minutes, until the piloncillo has dissolved. Remove the cinnamon stick. 2. In a separate bowl, whisk the masa harina with the 1 cup cold water until completely smooth, with no lumps. 3. Whisk the masa slurry into the simmering liquid. Cook over medium low heat, whisking constantly, for 5 to 7 minutes, until it starts to thicken. 4. Add the milk and chopped chocolate. Whisk until the chocolate is fully melted and the mixture is smooth. 5. Continue simmering over low heat, whisking often to prevent scorching, for 8 to 10 minutes, until the champurrado is thick enough to coat the back of a spoon. 6. Stir in the salt and vanilla.
