My Burrata in carrozza recipe! This is so moreish wowwww. Here’s the recipe to make two Ingredients: 2/3 anchovies 2 garlic cloves 1 can of plum tomatoes Extra virgin olive oil 4 slices of white bread 1 ball of burrata 2 eggs Handful of panko Veg oil for frying Toppings: Parmesan Sage (basil also works) Extra virgin olive oil Method: Start with a tomato sauce by frying the garlic and anchovies in olive oil then add your tomatoes and a pinch of chilli flakes if using. Season with salt and pepper and leave to simmer. Cut out 9cm rounds of bread and flatten slightly with a rolling pin. Place just 1/3 of the burrata and season with salt and pepper. Dip the edges of the other round in whisked eggs and then press together with the bottom slice and crimp with a fork. Dip the sandwich in the egg and straight into the panko breadcrumos. Fry in hot oil, turning once golden and add sage leaves if using. Then rest the sandwich for a minute and lastly, blend the sauce.
