Served with warm Mexican tomato sauce, they’re deeply comforting and full of bold, roasted flavor. The first bite gives you that delicate crunch, followed by smoky poblano and stretchy, melty cheese. It’s a Mexican favorite that always feels special at the dinner table. Ingredients For the Chiles 6 poblano chiles 8 oz Oaxaca-style string cheese, mozzarella, or Monterey Jack For the Batter 1 1/2 cups all-purpose flour, plus extra for dredging 1 1/2 teaspoons baking powder 1 teaspoon ground cumin 1 teaspoon fine salt, plus more for sprinkling 1 (12 oz) bottle or can of lager-style beer Vegetable oil, for deep-frying Optional Mexican Tomato Sauce 2 lbs ripe tomatoes, cored and chopped 1/4 medium yellow onion 6 garlic cloves 5 fresh cilantro sprigs 1 serrano chile, with seeds 1 tablespoon kosher salt 1/2 teaspoon ground cinnamon, preferably Mexican cinnamon Instructions Prepare the Chiles Char the poblanos: Preheat the broiler. Place the poblanos on a foil-lined baking sheet and broil, turning occasionally, until the skins are heavily blistered and charred on all sides, about 8–10 minutes. Steam: Immediately transfer the hot chiles to a bowl and cover tightly. Let them steam for about 10 minutes. This loosens the skins and makes them easier to peel. Peel: Carefully rub away the charred skins with your fingers or a paper towel. Avoid rinsing the peppers, since water can wash away some of their roasted flavor. Stuff: Make a lengthwise slit in each poblano. Carefully remove the seeds and membranes while keeping the pepper mostly intact. Stuff each chile with cheese. Use a toothpick to close the opening if necessary. Make the Batter Combine the dry ingredients: In a large bowl, whisk together the flour, baking powder, cumin, and salt. Add the beer: Gradually whisk in the beer until you have a smooth, thick batter with no large lumps. Heat the oil: Pour about 3 inches of vegetable oil into a heavy, deep pot. Heat to 365°F. Keep the oil at a steady temperature while frying. Fry the Chiles Dredge: Lightly coat each stuffed poblano in flour, shaking off the excess. Batter: Dip each floured chile into the beer batter, turning carefully until completely coated. Fry: Carefully lower the battered chiles into the hot oil, working in small batches so the temperature doesn't drop too much. Fry for about 2–3 minutes per side, turning gently, until puffed and golden brown. Drain: Transfer the fried chiles to a paper towel-lined plate or wire rack. Sprinkle lightly with salt while they're still hot. Make the Mexican Tomato Sauce Blend: Add the tomatoes, onion, garlic, cilantro, serrano, salt, and cinnamon to a blender. Blend until smooth. Simmer: Pour the sauce into a saucepan and cook over medium heat for 15–20 minutes, stirring occasionally, until slightly reduced and thickened. Serve Plate: Spoon some warm tomato sauce onto each plate and place a crispy chile relleno on top. Drizzle with additional sauce. Garnish: Finish with fresh cilantro or a little crumbled queso fresco, if desired. Serve immediately while the batter is crisp and the cheese is perfectly melted.
