Welcome to episode one of my new TRADER JOES MEALS SERIES 🛒 We’re starting off with this delicious Chicken Shawarma Bowl. I love their marinated chicken shawarma because you don’t need to buy a ton of ingredients for a marinade 🙌 Plus you just have to toss it on a pan and that’s it! I paired it with the Trader Joe’s quinoa, a cucumber tomato salad, arugula, and a little tzatziki on top 😋 *Yields: 2 servings/bowls* Ingredients: - 1 package of chicken shawarma - 1/2 cup white quinoa - arugula - 1/2 cup chopped Persian cucumbers - 1/2 cup diced cherry tomatoes - spoonful of tzatziki or vegan tzatziki for serving - lemon wedges for garnish Directions: - preheat oven to 400°F - line a baking sheet with a bit of olive oil and spread evenly, then add the chicken from the package and cook for 40 minutes (until it’s internal temp is 165°F) - meanwhile, rinse quinoa well and add to a pot. add double the amount of water and bring to a boil, stir, then simmer and cover for 10-15 minutes or until the water has absorbed - cut the cucumber and the cherry tomatoes into quarters and mix together - in two large bowls, add an equal amount of quinoa, handful of arugula, cucumber tomato salad, 1 chicken thigh each, a dollop of tzatziki and a lemon wedge to garnish each - store the rest of the chicken in the fridge for 3-4 days . . . #traderjoes #traderjoesmeals #EasyRecipes #easydinner #healthydinner #healthydinnerideas #healthyrecipe #chickenshawarma #lunchbowl #healthylunch
