@shilohfarm: A fresh garden dinner doesn’t get much easier than this 🌿🍅 When the garden starts producing faster than you can eat it, throw everything in a pan and call it dinner 😂 This one is fresh, easy, and only leaves you with one pan to wash.heres how to make one pan pesto chicken with fresh garden veggies. Ingredients: 2 chicken breasts 1 zucchini, sliced 1/2 red onion, diced 1 cup cherry tomatoes sliced 1 cup of green beans 1/2 red onion, sliced 1/2 cup pesto 1/2 cup chicken stock 1/4 cup of heavy cream 2 cloves garlic, minced Salt + pepper Parmesan and lemon juice for topping Fresh basil Directions: Season the chicken with salt and pepper and sear it in a large pan until golden on both sides. Remove and set aside. Add the zucchini, green beans, onion, corn, and garlic to the same pan and cook for a few minutes. Add your minced garlic to the pan then after 30 seconds you’ll make you sauce by pouring in the chicken stock and heavy cream. Stir in the pesto and then nestle the chicken back into the pan. Toss in the cherry tomatoes for the last few minutes. Finish with Parmesan, lemon juice and fresh basil and serve over rice, pasta or gnocchi!
