@drterrysimpson: Baking Biology - The Ancient Art of Sourdough: A Family Tradition from the Klondike Gold Rush I talk about the commonality between wine and bread through fermentation, sharing the story of my grandfather who carried sourdough starter over the Chilkoot Pass during the Klondike Gold Rush. I explain how sourdough was essential for survival in Alaska and how we're waking up our starter to make pancakes tomorrow! #learnbiologyontiktok #Science #baking #biology #lesson

Every time I tune into you, I learn something new. Speaking of starters, when I was in school, specifically Arizona State... just saying... A starter for Amish Friendship Cake was given to me, along with instruction as to the process to complete the process. She didn't realize I wasn't that difficult to get into bed, but that's another story. I got started making that delicious bread, and it made wonderful Christmas gifts.

I just sent for the Oregon Trail starter, from 1847. It is dehydrated, and they send it to you for free if you send a self addressed stamped envelope. I enjoy your content, and I listen to The Proof podcast and heard you on there a couple of times.

Although using an established starter can influence your initial flavor profile, how you maintain it and the flour you feed it matter far more in the long run. Plus, you can easily start your own fresh sourdough culture from scratch using unbleached, whole-grain flour in just a week or two.

Pretty amazing stuff. So the bowl you put together for the pancakes and the bowl you showed for the starter are two different things, right?

I was on a sourdough bread-making obsessive episode a couple decades ago w/my breadmaker. I only used a quarter cup or so of starter as I recall for my one-pound loaves. So good! 👍🏻
