What we are eating tonight: Fall edition! 🍂Cranberry glazed chicken. This recipe is very customizable to your preference, so be sure to taste and adjust as you go! I simply seasoned my chicken breasts, then thoroughly seared them in a pan with a little oil and butter on both sides. In the same pan, I added my cranberries. You can use fresh, frozen, or canned cranberries. The amount you use depends on how much glaze you want to make. I used one whole can of cranberry sauce. If you’re into a citrusy, fruity twist, you can add orange juice and orange zest. I added brown sugar to cut some of the tanginess from the cranberry sauce. To make it a little more savory, I also added a bit of chicken broth. It’s important to taste and adjust as you go! I personally don’t like adding too much orange because it can become overpowering and make the glaze taste overly floral, almost like potpourri. I recommend starting with a little and adjusting as you go. Avoid adding too much zest, especially the white pith, since it can make the glaze bitter. You want just enough orange to brighten the cranberry without overpowering it! Once your glaze is to your liking, add the chicken back into the pan and place it in the oven for about 35-40 minutes on 350, basting the glaze over the chicken halfway through. I like to broil it for about 5 minutes at the end to give it a little crispiness and deepen the color of the glaze. #fall #fallfood #cranberry #orange #supper
