Ingredients
Chicken
● 3 large chicken thighs, visible in the video, deboned and cut into large pieces
Approx. 1½ lb | 680 g
Chicken Marinade
● Salt: 5 g | about 1 tsp
● Sugar: 10 g | about 2½ tsp
● Garlic powder: 2 g | about ¾ tsp
● Ground ginger: 0.5 g | about ¼ tsp
● Chili powder: 2 g | about 1 tsp
● Ground black pepper: 1 g | about ½ tsp
● Ground white pepper: 2.5 g | about 1 tsp
● Water / scallion-ginger water: 15 g | 1 tbsp
Marinating Time
● 4 hours OR refrigerate overnight
Seasoned Frying Flour
● All-purpose flour: 200 g | about 1⅔ cups
● Cornstarch: 80 g | about ⅔ cup
● Garlic powder: 2 g | about ¾ tsp
● Ground white pepper: 4 g | about 1½ tsp
● Salt: 4 g | about ¾ tsp
● Baking soda: 3 g | about ¾ tsp
● Ground black pepper: 2 g | about 1 tsp
Wet Batter
● 1 large egg
● Whole milk: 50 g | about 3 tbsp + 1 tsp
● Prepared seasoned frying flour: 90 g | about ¾ cup
Frying
● Neutral frying oil, enough for deep frying
● Oil temperature: 338–356°F | 170–180°C Serving
● Lemon sparkling water
Making Process
Prepare & Marinate
● Debone the chicken thighs and cut into large pieces.
● Add all seven marinade seasonings plus 15 g scallion-ginger water
● Massage thoroughly and marinate 4 hours or overnight.
Make Frying Flour
● Mix 200 g flour, 80 g cornstarch, garlic powder, white pepper, salt, baking soda, and black pepper.
Make Wet Batter
● Beat 1 egg + 50 g whole milk.
● Add 90 g of the prepared frying flour and mix until smooth.
Batter & Dredge
● Pour the wet batter over the marinated chicken and mix thoroughly.
● Transfer each piece into the remaining dry flour.
● Press firmly until completely coated, then shake off excess flour.
Fry
● Heat oil to 170–180°C | 338–356°F.
● Add the chicken.
● Once the crust has set, flip the pieces.
● Continue frying until completely golden, then remove and drain.

Baking soda??? I think spose to be powder .. and the corn startch never head of baking soda in batter ……Be careful not to use baking soda, which won’t work and will leave an aftertaste.
