@khik_pamiri: Wakhi Cuisine | K̃hikwor K̃hec̃h — G̃helmindi G̃helmindi is a traditional Wakhi Pamiri dish from Gojal Valley, Upper Hunza, and other parts of Gilgit-Baltistan. It is traditionally prepared for special occasions such as the plowing season, Kiryari (helping one another), Rasm, and community gatherings. Made with round Negan (wheat chapati) layered with cultured yogurt/Q̃ũrũt, curd, salt, and chili, then generously finished with Chuwan Tal (apricot oil) and nuts, G̃helmindi has a distinctive salty, sour, and tangy T̃ras̃p taste. Its story goes beyond the ingredients. G̃helmindi reflects the Wakhi pastoral heritage of S̃hũpũn K̃hik, where milk, yogurt, qurut, butter, cheese, and other locally produced foods were central to community life. Today, women-owned businesses and local food entrepreneurs are helping introduce these traditional foods to new generations and wider audiences.
