If you have never tried a chocolate chip ricotta cake - take this as your sign to make it! This cake is so simple and quick to make, but yields a delicious and moist cake with the perfect crunch on the outside. It only takes a few minutes to whip up and then you put it in the oven to bake. Ingredients: 2 Cups AP Flour 1/4 tsp salt 2 tsp baking powder 5 TBSP salted butter, softened 1 cup sugar 1.5 cups ricotta 2 eggs 1 egg yolk 3 tsp vanilla 1.25-1.5 cups mini chocolate chips, tossed in 1 tbsp flour to prevent them from sinking to the bottom of the cake **Powdered sugar to top In a medium bowl, combine flour, salt, and baking powder. In a mixer with a paddle attachment, combine butter, sugar, and ricotta for 5 minutes until light & fluffy. Add eggs, egg yolk, and vanilla and combine until fully incorporated, about a minute. Add dry ingredients and combine. Fold in chocolate chips - make sure not to over mix because you don’t want all of the flour to come off the chocolate chips. In a greased 9 inch cake pan, add batter evenly to pan. Bake at 350 degrees for 40-50 minutes until fully baked. (Mine was exactly 45 minutes) Once cooled, using a fine sieve, sprinkle powdered sugar on top of cake and serve. #cake #dessert #baking #italiandessert #food
