@imhannahcarr: Made for my kids’ back to school lunchboxes with oats, honey, pure maple syrup, almond butter + chocolate chips. Soft, chewy, freezer friendly and actually kid approved. Recipe below 🤎 — CHEWY CHOCOLATE CHIP GRANOLA BARS 🍁🍫 Makes 10-12 bars INGREDIENTS: 2 ½ cups rolled oats ½ tsp cinnamon ¼ tsp fine salt ⅓ cup honey ¼ cup pure maple syrup ¼ cup unsalted butter 2 Tbsp creamy almond butter or creamy PB 1 tsp vanilla extract ⅓ cup mini chocolate chips, some chopped so… divided INSTRUCTIONS: 1. Preheat oven to 325°F. Spread oats on a baking sheet and toast for 8–10 minutes, stirring once. 2. Line an 8x8 pan with parchment. 3. Add honey, maple syrup, butter and almond butter to a small saucepan over medium-low heat. Stir until melted and smooth. Once gently bubbling, simmer for 1 minute, stirring. 4. Remove from heat and stir in vanilla. 5. Combine toasted oats, pulsed oats, cinnamon and salt. Pour the warm maple mixture over the oats and stir until VERY well coated. 6. Cool for about 5 minutes, then fold in most of the chocolate chips. Chop them if you want. 7. Press mixture VERY firmly into the prepared pan. Use parchment and the bottom of a measuring cup to really compact it. 8. Press remaining chocolate chips on top. 9. Refrigerate at least 2 hours, then lift from the pan and cut into 10 bars. STORAGE: Keep airtight at room temp for 5–7 days or refrigerated for up to 2 weeks. Freeze individually wrapped for up to 2–3 months. LUNCHBOX: Yep! These are made to hold up in a lunchbox. For the best shape, make sure you simmer the binder for the full minute, press the mixture REALLY firmly into the pan, and cut the bars while completely cold. #lunchboxideasforkids #granolabars #lunchboxideas #kidssnacks #homemade
