Mom’s Ricotta Cake 🇮🇹❤️ Some recipes never go out of style. This is my mom’s ricotta cake—the one I grew up eating in Sicily. Soft, light, incredibly moist, and filled with dark chocolate in every bite. Simple ingredients, homemade with love, just the way it should be. Save this recipe and let me know if you’ll be making it! 👇 Ingredients: * 250g whole milk ricotta, well drained * 150g sugar * 3 eggs * 120g all-purpose flour * 80g dark chocolate chips (or chopped dark chocolate) * 80ml neutral oil (or 100g melted butter) * 16g baking powder * 1 tsp vanilla extract (optional) * Pinch of salt * Powdered sugar for dusting Directions: 1. Preheat the oven to 350°F (180°C). Grease and line a 22cm (9-inch) cake pan. 2. Beat the eggs and sugar until pale and fluffy. 3. Mix in the ricotta, oil (or melted butter), vanilla, and salt. 4. Fold in the flour and baking powder until just combined. 5. Gently stir in the dark chocolate. 6. Pour into the pan and bake for 40–45 minutes, or until a toothpick comes out clean. 7.
