Remove as much dirt from the cracks as you can, and kill the remaining roots with salt, boiling water or weed killer. Then pour jointing sand into the cracks to keep them from coming back. Some types of sand can be hardened into cement by adding water if you want to really seal it

Spray with cleaning vinegar. It kills the weeds and they’re easier to remove

Next time pour boiled vinegar in the cracks on a dry day. bonus points if it's hot out. all weeds unalive by morning and won't come back.

Vinegar mixed with salt and just pour the solution into the cracks, I throw it all over my pavers it works wonders

You can get a tool for weeds at mitre 10, although your scrapper did a good job

There’s this stuff called locking sand (that’s what it’s called in the us). You pour it in the cracks, sweep away any extra, then water it down with the hose and it turns into something really hard (concrete-ish?)

Polymeric sand is the first thing that comes to mind for those joints. I think it’s the same thing other people have recommended in the comments.

Those are likely expansion cuts rather than pavers, so if you water blast the sediment out then there will nowhere for the weeds to grow ☺️
