Knead for 8–10 minutes, until the dough is smooth and elastic. 4. Place the dough in a lightly greased bowl, cover, and let it rise for 1–1½ hours, or until doubled in size. 5. Punch down the dough and divide it into 3 equal portions. 6. Roll each portion into a long, even rope of about the same length. 7. Place the three ropes side by side and weave/braid them together, alternating the outer rope over the centre rope to create a neat braided pattern. 8. Pinch the ends together and tuck them underneath the loaf. 9. Place on a lined baking tray, cover, and allow to rise again for 30–45 minutes, until puffy. 10. Whisk together the egg and milk, then gently brush the surface of the bread. 11. Bake in a preheated oven at 180°C (350°F) for 25–30 minutes, or until golden brown. 12. Remove from the oven and brush the hot bread lightly with melted butter for a soft, shiny crust. 13. Allow to cool on a wire rack before slicing.
