Penne alla Vodka ✨ 350-400 g of penne 2 tbsp of olive oil 5-6 slices of bacon (cut into small pieces) 1/2 small yellow onion (finely chopped) 4 garlic cloves (finely chopped) 1 - 1 1/2 cup of passata or 2 tbsp of tomato paste 1 cup of heavy cream 1.5 oz of vodka 1/3 cup of Parmigiano cheese Parsley or basil for garnish Bring a large pot of water to a boil. Salt water and cook penne al dente (1-2 minutes less than box instructions). Heat olive in a large pan on medium-high heat and add bacon. Cook and remove. To the same oil, add onions and garlic and cook until fragrant. Please Note: if you find there is too much oil from the bacon; feel free to disregard some. There should be about 3-4 tbsp of oil in the pan Pour in passata and cook for 2-3 minutes. Pour heavy cream and vodka and allow sauce to thicken and reduce. Before draining, reserve a cup of starchy pasta water. Add cooked pasta and pasta water to the sauce. Top with Parmigiano cheese and on a low heat stir to combine all the flavours.
