Meet Jing Herng, 28, the owner of Herng Hao Chi Hokkien Mee at Toa Payoh Lorong 8 Market & Hawker Centre, where his parents run a yong tau foo stall (#01-70), and his uncle sells roast meats (#01-45). Before starting his own stall, Jing Herng studied Materials Science and Engineering at NUS, served in the Commandos during NS, and later took a leap of faith into the hawker world. Now, his days start before 8am, with prep, service, and more than 12 hours on his feet, sometimes selling up to 200–300 plates a day. And on the toughest days? I just bough takeaways couple of days ago. If u ask me i would wish for them to packet in the brown paper than disposables. Browns absorb the taste much better than disposables. The lard can best be packed separately
