On the Monday question: the days in a week are 7, so this is a mod7 division question. So, 2025/7 is 289 rem 2. So the problem reduces to (2^20)^25 in mod 7. We use FLT to solve for the exponent 20^25 mod 6 (7 is a prime number with a cyclicity of 6, hence mod 6). 20/6 leaves a rem. of 2. The powers of 2 mod 6 have a rem. of 2 when odd (as is 25); so the mod. form of 20^25 is 2^2 =4. So, all that is needed is to work out 2025^20^25 in mod 7 (so divide 2025 by 7 to get a rem of 2, then do 20^25 mod 6 using FLT, to get 2^25 with a rem. of 2, and finally do 2^2 or 4). If Monday =1, add the 4 to arrive at 5 = Friday!!
