 Makes approximately 8–10 large cookies. 
 Brownie Cookie Dough
 ● 4 oz (113g) dark chocolate, preferably 70%
 ● 4 tbsp (57g) salted butter
 ● ½ cup (100g) granulated sugar
 ● ¼ cup (50g) packed brown sugar
 ● 2 large eggs
 ● 1 tsp vanilla extract
 ● 1 tbsp neutral oil

 ● ½ tsp baking powder

 S’mores Centers

 Optional Finish
 ● Melted chocolate, for drizzling 
 Making Process 
 Make the Brownie Dough
 1. Melt the dark chocolate and butter together until glossy, then cool slightly.
 2. Whisk the eggs with both sugars until pale, thick, and foamy. Mix in the vanilla and oil, followed by the melted chocolate mixture.
 3. Sift in the flour, cocoa powder, baking powder, and salt. Fold gently just until a thick
 brownie-cookie dough forms. 
 Build the S’mores Centers
 1. Arrange graham cracker squares on a parchment-lined tray and place a piece of chocolate and
 one marshmallow on each.
 2. Scoop the brownie dough over each stack and shape it around the filling, leaving a small opening
 at the top so some marshmallows can expand through while baking. Bake & Finish
 1. Bake at 350°F (177°C) for 12–15 minutes, until the outside is set and crackly but the center
 remains soft.
 2. Rest on the baking sheet for 5–10 minutes before moving. The residual heat finishes setting the
 fudgy centers.
 3. Drizzle with melted chocolate if desired and serve slightly warm for the best chocolate melt and
 marshmallow pull.
