Strawberry matcha cookies🍓🌸🍵                     Recipe:                                                                 Ingredients Matcha cookies -2 cups all-purpose flour (240g) -1/2 tsp baking soda  -1/2 tsp baking powder -1 1/2 Tbsp matcha powder, sifted -1/2 tsp salt -3/4 cup unsalted butter, softened (170g) -3/4 cup granulated sugar (150g) -1/4 cup light brown sugar (54g) -1 egg + 1 egg yolk, room temperature  -1 1/2 tsp vanilla  -1 cup white chocolate chips (170g) Strawberry mascarpone frosting  -8oz mascarpone cheese, cold -1 1/2 cups heavy whipping cream, cold (355ml) -1 cup powdered sugar (113g) -1 tsp vanilla -1 cup freeze-dried strawberries (24g) Instructions  For the matcha cookies: 1. Preheat oven to 350°F and line a baking sheet with parchment paper. 2. In a medium bowl, whisk together flour, baking soda, baking powder, matcha powder, and salt. Set aside. 3. In a large bowl, beat the butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes. 4. Add the egg, egg yolk, and vanilla. Mix until combined. 5. Mix in the dry ingredients until just combined. Do not overmix. 6. Fold in the white chocolate chips. 7. Scoop the cookie dough using a 3-tablespoon cookie scoop and place 2 inches apart on a baking sheet. Gently flatten the tops of each scoop. 8. Bake for 10-12 minutes, or until the edges are set and the centers look slightly soft. Let the cookies cool completely before frosting. For the strawberry mascarpone frosting: 1. Grind the freeze-dried strawberries into a very fine powder. You should get about 4–5 tablespoons of powder. Set aside. 2. In a large bowl, beat the mascarpone cheese until smooth. 3. Add the heavy whipping cream, powdered sugar, vanilla, and 4 tablespoons of the freeze-dried strawberry powder. Beat on medium speed until thick and stiff peaks form. If needed, add a little more cream or powdered sugar to reach a thick, spreadable consistency. 4. Add the frosting to a piping bag. Cut off the tip of the piping bag or use a piping tip (such as a Wilton 2A) and pipe a swirl on top of the cooled cookies.
