Preheat your oven to 400°F (200°C). Lightly grease a large 9x13-inch baking dish with a drizzle of olive oil or cooking spray and set it aside. 2. Prepare the chicken. Pat the chicken breasts dry with paper towels, then season generously on both sides with salt, pepper, oregano, basil, smoked paprika, and garlic powder. 3. Arrange the vegetables. Scatter the sliced zucchini, halved cherry tomatoes, red onion, garlic, and Kalamata olives evenly across the bottom of the prepared baking dish to create a colorful vegetable bed. 4. Drizzle with olive oil and lemon. Pour the extra-virgin olive oil and fresh lemon juice over the vegetables, then toss everything gently to coat. Season the vegetables lightly with salt and pepper. 5. Nestle the chicken on top. Place the seasoned chicken breasts directly on top of the vegetable mixture, pressing them in slightly so they make good contact with the vegetables beneath. 6. Add the feta cheese. Sprinkle the crumbled feta generously over the chicken and vegetables - this is what transforms a good bake into an absolutely irresistible Greek Chicken and Zucchini Dish. 7. Bake uncovered for 30-35 minutes. Place the dish in the preheated oven and bake until the chicken reaches an internal temperature of 165°F and the zucchini is tender with slightly caramelized edges. 8. Broil for extra color (optional). For a gorgeous golden-brown top, switch your oven to broil for the last 2-3 minutes, watching closely to prevent burning. 9. Rest and garnish. Remove from the oven and let the casserole rest for 5 minutes before serving. Finish with a scatter of fresh parsley or basil for a vibrant, fresh finish. My one note would have been that I wished we had fixed rice to go with this.
