@brookelmason: obsessed with anything brothy right now 🍜🌶️ these spicy coconut crispy beef broth bowls were so easy and packed with protein - recipe below! for the broth (blend together): — ¼ cup (84g) gochujang (add more to taste) — 1 cup (226g) cottage cheese — 1.5 cup chicken broth — 1 cup coconut milk* *can also skip the coconut milk and do 3 cups of chicken broth instead if you prefer, but I think the coconut milk adds some good flavor for the beef: — 1 lb ground beef — 2 tbsp maple syrup — 2 tbsp coconut aminos or soy sauce — 2 tbsp rice vinegar — 1 tbsp toasted sesame oil (optional) — 1 tbsp (18g) white miso paste (optional) for serving: — jasmine rice — cucumbers — green onions — sesame seeds — @Momofuku chili crunch how to make: 1. start cooking the jasmine rice 2. blend cottage cheese, chicken broth, coconut milk, and gochujang in a blender until smooth. pour into saucepan and warm over low heat, stirring occasionally 3. add ground beef to a pan with avocado oil and let it brown for 2-3 minutes before breaking it apart and cooking through 4. while the beef cooks, whisk together maple syrup, coconut aminos, rice vinegar, sesame oil, and miso paste 5. pour sauce over cooked beef and cook for 1-2 mins, letting sauce caramelize 6. assemble bowl with rice, beef, cucumbers, some broth, green onions, sesame seeds, and drizzle of chili crunch add more chili crunch, gochujang paste, and salt to taste if you need more flavor! #recipes #EasyRecipe #dinner #protein #DinnerIdeas
