@sophiesmunch: trying to heal my bones over here !! 🥦🥦🥦 broccoli orecchiette 🍝 (serves 2) broccoli is FULL of vit c, which produces collagen, perfect for bone, joint and skin health. it also has heaps of calcium and magnesium in but the main thing is, it tastes divine! GO munch 🫶 - 1 head of broccoli, finely sliced and diced - 250g orecchiette - 1 red chilli, diced - 1 garlic clove, finely diced - 1 tsp of fennel seeds - 1/2 tin of anchovies (optional) - 1 lemon, zest and juice - handful of grated parmesan - reserved pasta water method • start by popping your pasta on in a big pan of well-salted boiling water. cook this for 8 mins or till al dente. before you drain it, save a mug of the pasta water—you’ll need it! meanwhile, chop up the broc, chilli and garlic, then add a glug of oil in a large frying pan. add the broc and let this cook for a few mins, you want it al dente here. add the fennel seeds, garlic and chilli and let them sizzle for about 1 minute. if you’re using anchovies, add them now, let them melt into the sauce. add splashes of pasta water as you go, you want the broccoli to soften right down so some of it almost turns into the sauce. this will take 5-10 minutes. once the broccoli has turned less vibrant, tip the cooked orecchiette straight into the pan, then add the lemon zest, lemon juice and parmesan. toss everything together, adding another splash or two of pasta water until it’s silky and glossy. give it a taste, season with plenty of black pepper (and salt if it needs it), then serve with an extra shower of parmesan and a little drizzle of good olive #pasta #broccolipasta #orecchiette #italy
