He's not getting "turned on" because gon is powering up, he's getting turned on by a future in which he can fight back against gon. Hisoka goes onto state (as gon is punching him) "the fruit is not ready, I need to end this before I accidentally k*ll him." We're shown this lust for battle back in the hunter exams, (2011 hxh), when Hisoka runs into Leorio and Kurapika after k*lling a bunch of civilians, he's not satisfied and abruptly ends the standoff with Leorio and Kurapika because he recognizes their potential and doesn't want to snuff it out, after this, Hisoka goes on the "hunt" and you can see him walking slouched over before he sees another person, charging like an animal towards them, this gives gon the opportunity to steal his nametag and hisoka notices gon is utilizing zetsu subconciously. The 2011 has a completely different style than the 1998 one, in which it's more clear about hisoka's lust for battle/potential, for example, after the hunter exams, illumi also recognizes gons potential but as an assassin, he sees the threat, illumi states, "im going to k*ll gon" and Hisoka releases his hatsu (Bloodlust) and responds, "If you touch him, I'll k*ll you." Furthermore, in the Zodiac arc, Hisoka is assigned to k*ll alluka and states, "maybe I should k*ll alluka to incur killua's wrath, then k*ll killua to incur illumi's wrath, isn't that the best of both worlds?" As he is visibily excited at the thought of a bloodlusted confrontation with an amped killua and later, an amped illumi. He then forces illumi to release his bloodlust which gives killua the chance to escape and save gon, later panning to a toybox collection, adding alluka to the mix of potential fighters to nurture. The realism behind it follows real fighters, for example, Jon Jones became er*ct when wrestling hasbulla, is he s*xually attracted? Of course not, it's the art of combat that excites the best fighter in history, Mike Tyson in a conversation with Joe Rogan literally asked, "what's it called when fighting makes you er*ct?" It's not the opponent that causes the arousal, it's the aspect of combat...
