This is my Pumpkin Sticky Toffee Pudding, and OMG… it’s insanely delicious. Super moist, spiced, sticky, and soaked in the dreamiest toffee sauce. 🍂 Ingredients For the pudding Dates (sticky base): •	150 g pitted dates, chopped •	240 ml hot water •	½ tsp baking soda (extra) Dry ingredients: •	200 g all-purpose flour •	1 tbsp cornstarch •	1 tsp baking powder •	½ tsp baking soda •	½ tsp salt •	1½ tsp cinnamon •	½ tsp ginger •	¼ tsp nutmeg •	110 g dark brown sugar •	40 g granulated sugar Wet ingredients: •	2 large eggs •	50 g melted butter •	50 ml oil •	1 tightly packed cup pumpkin purée •	1 tsp vanilla extract ⸻ Sticky Toffee Sauce •	120 g butter •	200 g dark brown sugar •	200 ml heavy cream •	1 tsp vanilla •	A pinch of salt Instructions 1️⃣ Prepare the dates (essential sticky pudding step) 1.	Place the chopped dates in a bowl. 2.	Pour the 240 ml of hot water over them. 3.	Let sit for 10 minutes. 4.	Mash lightly — it should be a rustic purée with small pieces. 5.	Add ½ tsp baking soda — it will foam a little (totally normal!). 2️⃣ Mix the wet ingredients In a large bowl combine: •	melted butter •	oil •	both sugars •	eggs •	pumpkin purée •	vanilla •	the warm date mixture The mixture will be thick and very moist. 3️⃣ Add the dry ingredients In another bowl whisk together: •	flour •	cornstarch •	baking powder •	baking soda •	salt •	spices Add the dry ingredients to the wet mixture and mix only until combined. 4️⃣ Baking •	Oven: 350°F / 175°C •	Pan: Greased 8x8” pan •	Bake time: 25–30 minutes It should bake up moist, soft, dense, and slightly sticky. You are not aiming for a fluffy cake texture. 🍯 5️⃣ Make the Sticky Toffee Sauce 1.	In a small saucepan melt the butter. 2.	Add the dark brown sugar. 3.	Pour in the heavy cream. 4.	Cook over medium heat for 3–5 minutes, until it thickens slightly. 5.	Stir in vanilla and salt. 6️⃣ Final Assembly 1.	Remove the pudding from the oven while hot. 2.	Poke holes all over the top with a skewer or toothpick. 3.	Pour some of the sauce on top so it soaks in. 4.	Serve with extra warm toffee sauce and vanilla ice cream or whipped cream. #pumpkinseason #cake #pudding #EasyRecipe #CapCut
