@lydmama: Homemade pesto 4c basil, washed and dried 1c pine nuts 1c FRESH shredded Parmesan 1c olive oil 6-8 garlic cloves Juice from 1 lemon 1.5-2tsp salt 1tsp black pepper Toast the pine nuts then add everything except basil to blender and blend a little then add the basil and blend again. Quick tip, Blanche your basil and some boiling hot water for like 30 seconds to maybe a minute it helps the green retainers vibrancy and its color and it won’t brown overtime when it gets cold
