This ice cream is super creamy and so easy to make! Here is how to make these! Ice Cream Ingredients • 2 cups heavy cream • 1 cup whole milk • 3/4 cup sugar • 4 egg yolks • seeds of 1 vanilla bean • 1/4 tsp salt Instructions In a saucepan combine the heavy cream, milk, vanilla bean seeds, and salt. Heat over medium heat until steaming but not boiling. In a bowl whisk together the sugar and egg yolks until pale. Slowly pour the warm cream mixture into the egg mixture while whisking constantly. Return everything to the saucepan and cook over medium low heat, stirring constantly, until the mixture thickens enough to coat the back of a spoon. Strain into a bowl and chill completely in the refrigerator. Churn in an ice cream maker according to the manufacturer’s instructions, then freeze until firm. Waffle Cones Ingredients • 2 large egg whites • 1/2 cup granulated sugar • 1/4 cup melted salted butter • 1/4 cup milk • 1 tsp vanilla extract • 3/4 cup flour Instructions In a bowl whisk the egg whites and sugar until combined. Add the melted butter, milk, and vanilla and mix well. Stir in the flour until smooth. Scoop a small amount of batter onto a preheated waffle cone maker and cook until golden brown. Immediately remove and shape into a cone while still warm. Allow to cool completely before filling. Chocolate Shell Ingredients • 1 cup chocolate chips • 3 tbs coconut oil Additional Topping • Salted peanuts, chopped Instructions Add the chocolate chips and coconut oil to a microwave safe bowl. Microwave in 20 second intervals, stirring between each, until smooth. Allow to cool slightly before pouring over ice cream. Top with chopped salted peanuts and enjoy.
