Classic Beef Stew with carrots and potatoes Ingredients * 1/2 kg boneless beef * 1 tbsp paprika powder * 1 tbsp black pepper powder * 1 tbsp cumin powder * 2 tbsp plain flour (maida) * ½ tbsp salt * 5 tbsp cooking oil * 1 onion, chopped * 1 tbsp garlic, * 1 tomato, chopped * Sweet red chilli pepper, chopped, few * 2 tbsp tomato purée * ⁠1/4 tbs salt * 2½ glasses warm water * ½ cup potatoes, cubed * ½ cup carrots, cubed * A pinch of oregano * Fresh parsley, for garnish Method 1. Coat the beef with all spices and Mix well.Heat the oil in a pan and fry the beef over medium-low heat until lightly golden on both sides.Add the chopped onion and sauté. Add garlic and sauté again. Add chopped tomato and sweet red chilli pepper. Mix and cook briefly.Stir in the tomato purée and remaining ½ tbsp salt.Add 2½ glasses of warm water, cover and cook on low heat for 1–1½ hours, until the beef is tender. 2. Add the cubed potatoes, carrots and a pinch of oregano. Cook for another 20 minutes, until the vegetables are tender. 3.
