Sinaloa-Style Tacos Gobernador 🦐🌮 Some dishes just take you back. Every December growing up, we would travel to Los Mochis, Sinaloa, and I remember eating Tacos Gobernador during those trips. It’s one of those dishes that has always stayed with me, and making them today brings back a lot of those memories. Tacos Gobernador originated in the coastal city of Mazatlán, Sinaloa, in the late 1980s at Restaurante Los Arcos, where a shrimp-filled quesadilla was prepared in honor of Francisco Labastida Ochoa, who would become governor of Sinaloa. On their own, the ingredients are incredibly simple, but bringing them together in a hot pan is where the dish really develops. As the onion, garlic, tomato, and poblano sauté together, their flavors begin to marry before the shrimp and fresh lime bring everything together. Add melted queso Oaxaca and fold it all into a warm corn tortilla, and you have a dish that’s emblematic of Sinaloan cuisine. The Recipe Ingredients: * Corn tortillas * Queso Oaxaca * Shrimp, finely diced * Roma tomatoes, diced * White onion, diced * Garlic, minced * Poblano pepper, diced * Salt & black pepper * Fresh lime juice Instructions: 1. Sauté the diced shrimp with tomato, onion, garlic, and poblano. 2. Season with salt, black pepper, and fresh lime juice. 3. Add queso Oaxaca to warm corn tortillas and allow it to melt. 4. Spoon the shrimp mixture over the melted cheese. 5. Fold and cook until the tortillas are lightly crisp. #tacos #Sinaloa #mexicanfood #foodreels @Northgate Market @WÜSTHOF
