@egg_recipes: Eat the rainbow this summer with this make ahead egg wrap 🌯🌈 Great for outdoor family adventures during the summer holidays! What you'll need: 🥚 4 British Lion eggs 4-8 tbsp of beetroot houmous 🌱 4 spring onions, finely chopped 🥕 2 medium carrots, washed and grated 🍳 2 tbsp vegetable oil 🌿 A handful of coriander leaves ☀️ To serve: raspberries, cucumber sticks, Cheddar cheese and small crackers 1. Heat the oil in a large non-stick frying pan, add the onions and fry until soft. 2. Beat the eggs and then add half the mixture to the pan and cook for about two minutes or until set and the base is golden. Flip over and cook for a further minute. Repeat with the remaining mixture. 3. Transfer to a board and leave to cool - this can be done the night before and chilled. 4. To assemble, spread the houmous over the egg wrap, scatter over the carrot and coriander. Fold in the edges and roll up to enclose the filling. 5.
