MEXICAN FOOD! For the meat, I used 2lbs of Ranchera! Slice up your bistek into strips and season them however you like! As long as you’re not adding some sort of oil your macros should match mine! I like mine seasoned with garlic salt for this recipe. On a hot pan spray some zero-calorie cooking spray and sear half an onion. Once the onion is seared to your liking add the meat and cook it to the temp of your liking! I cover it with a lid to speed up the cooking process a bit and that's how I grew up watching my mom cook it! Once the meat is cooked add your sauce, bring it to a simmer, salt to taste, then cover it with a lid and turn the heat off and let it sit for 15min. Now its ready! For the sauce, I used 4 guajillo, 2 morita, 4 pouya, and 8 chile de arbol. De-seed the guajillo and pouya peppers. The morita gives it a nice smoky flavor and the chile de arbol is what makes it spicy so if you want something less spicy maybe only do half of the chile de arbol. Roast those peppers along with 200g of tomatillos. The peppers will be done quickly like 2min per side. The tomatillos will take around 10 minutes to roast if you want them to soften. Once everything is ready toss them in your blender with at least 1 1/2 cups of water 2 garlic cloves and salt.  For the rice, add 1 tsp of extra virgin olive oil to a hot pan and 1 cup of jasmine rice. Keep stirring the rice till it gets some brown to it. In a blender, you will mix 1 tomato, 1/4 onion, 2tsp of better than bouillon a pinch of salt 3 garlic cloves, and 2 cups of water. Add the sauce once the rice has some brown to it. Bring it to a simmer, cover it, set the heat on low and let it cook for 15 minutes!  To get your servings weigh out your rice and split it into 5 equal portions. For your meat weigh out your meat separated from your sauce split it into 5 equal portions and add the sauce to each meal prep evenly.
