don't remove the onion juice. that's literally one of the biggest mistakes people make. most restaurants don't even make good koobideh

you must mix it with your palm not with the fingers, if you mix it with the fingers your meat will be less sticky.

Most restaurants quality koobideh in the UK has nothing to do with authentic Iranian koobideh. We don't actually use a lot of onion in koobideh and it certainly shouldn't taste like onion or fat. It's more about the good quality meat and fat ratio.

Koobideh should be juicy but not tough or bouncy. It just needs to hold together on the skewer so don’t over mix. At home, you can just put into a cast iron pan and bake until done if you don’t have skewers.
