Lemon-Blueberry Loaf Cake 🍋🫐 Ingredients: For the loaf: - 200g granulated sugar - zest of two lemons - 150g unsalted butter, softened - 2 large eggs - 1 teaspoon vanilla extract - 220g all-purpose flour - 1 teaspoons baking powder - a pinch salt - 120g whole milk - 100g plain yogurt  - 170g fresh blueberries (coated in about one tablespoon of flour) For the icing: - 150g powdered sugar (sifted) - 100g blueberries - 25g water Notes: - I made the mistake of not sifting my powdered sugar, so please make sure you do! - I used a 20x10 cm loaf cake tin - Make sure to keep an eye on the cake, and if you notice that the top starts to brown too fast, place a foil over it. This way the top will not burn. In my case, the cake got nice and brown after 25 minutes, and that’s when i placed a foil on top. Instructions: 1. Preheat your oven to 180°C (350°F). Grease and line a 20x10 cm loaf pan with parchment paper. 2. In a large bowl, mix together the sugar with the lemon zest, then add the butter and cream everything together until light and fluffy. 3. Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract and the yogurt. 4. Add the dry ingredients to the wet mixture, along with the milk and mix until everything is incorporated. Lastly, fold in the blueberries. 5. Pour the batter into the prepared loaf pan and spread evenly. 6. Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean. If the top is browning too quickly, cover it with aluminum foil. (I covered it about 25 minutes in) 7. Once ready, let the cake cool down completely. 8. While the cake is cooling, make the icing: Add the blueberries and the water to a saucepan over medium heat and let them cook for a few minutes until they break down. Make sure to mash the blueberries while they start to soften. Once ready, strain it and let it cool. We are going to be using the clear liquid.  9. Add the powdered sugar to a bowl and gradually add the blueberry juice. Mix until smooth! 10.
