@phitzee: A salad you’ll actually want to eat and devour during this heatwave. It’s my crispy gnocchi salad with a harissa yoghurt dressing. For the salad: - 1 baby gem lettuce - 1/2 cucumber - 1 red onion - 15 cherry tomatoes - handful of parsley - handful of dill handful of dill For the gnocchi: - 1 pack gnocchi (500g) - 2 tbsp olive oil - 2 tsp smoked paprika - pinch of salt For the yoghurt dressing: - 1 cup soya yoghurt - 1 tbsp mayonnaise - 1/2 lemon, squeezed - 2 tsp harissa paste - salt, to taste - black pepper Prepare all the salad ingredients by finely chopping the lettuce, cucumber, red onion, cherry tomatoes, parsley and dill. Set them aside. Toss the gnocchi in a bowl with olive oil, smoked paprika, salt, and pepper until evenly coated. Place on a tray and air fry at 200C for approx 12-15 min, until golden and crispy. In the meantime, in a small bowl, whisk together the yoghurt, mayonnaise, lemon juice, harissa paste, salt, and pepper until smooth. Set aside. Combine the chopped salad ingredients with the crispy gnocchi and dressing in a large mixing bowl until evenly coated. Serve into bowls and enjoy! #gnocchi #EasyRecipes #salads #healthymeal
