CRÈME-BRUMASU!☕️ the ultimate best of both worlds desert🧘‍♀️ creamy, vanilla bean tiramisu. thin and crispy bruleed sugar crust. what could be better! recipe idea & inspo credited to @okonomikitchen 💓💓 my full recipe is below & will be up on my substack in more detail later. oh & send this to the tiramisu AND crème brûlée lovers in your life👀🫶🏼 RECIPE 300g (1 1/4 cups) strong coffee or espresso, cooled 45g (3 tbsp) Kaluha (or sub rum!) 4 large eggs, separated 80g (scant 1/2 cup) granulated sugar, divided 40g (3 tbsp packed) dark brown sugar 454g (16 oz) mascarpone 1 tsp vanilla bean paste 1/2 tsp kosher salt 16oz ladyfingers Granulated sugar, for brûléeing Combine the coffee and rum. Seperate your eggs and beat the whites until foamy. Gradually add the granulated sugar and whip to stiff peaks. Set aside in a seperate bowl. Beat the yolks with brown sugar until pale and fluffy. Mix in the mascarpone, vanilla, and salt. Gently fold your egg whites into the marscarpone mixture. Spread a thin layer of whip on the bottom of a baking dish. Quickly dip the ladyfingers in the coffee mixture and arrange in a single layer. Spread with half the mascarpone mixture, then repeat with another layer of dipped ladyfingers and mascarpone. Cover and chill for at least 4-6 hours, preferably overnight. Once chilled, sprinkle the top with a thin, even layer of granulated sugar and brûlée with a kitchen torch.
