Khoresh Havij is a traditional carrot stew, popular in many Turkish-speaking cities of Iran. This rich and hearty dish is made with tender beef, thinly sliced carrots, and dried plums or prunes. It’s typically served over fluffy saffron rice and makes a delicious lunch or dinner. The stew has a signature sweet-and-sour flavor that’s both comforting and unique.  Ingredients (Serves 3–4) * 1 lb (500 g) beef cubes * 1 large onion, finely diced * 3 large carrots, cut into thin sticks * 1/2 cup dried plums or prunes * 2 tbsp tomato paste * 1 tbsp salt * 1 tsp turmeric * 1 tsp black pepper * 3 cups boiling water * 2 tbsp bloomed saffron (for the stew) * 2 tbsp sugar * 2 tbsp fresh lemon juice * 2 tbsp bloomed saffron (for the carrots) * Olive oil for frying * Diced pistachios for garnish (optional) Instructions 1. Prepare the Stew Base:
In a large pot, heat some olive oil over medium heat. Add the finely diced onion and sauté until golden. Add the beef cubes and cook until browned on all sides. Stir in salt, turmeric, black pepper, and tomato paste. Mix well to coat the meat. 2. Simmer the Stew:
Add 3 cups of boiling water and 2 tablespoons of bloomed saffron. Reduce the heat to low, cover, and let simmer for about 1 hour and 30 minutes, or until the meat is tender. 3. Prepare the Carrots:
While the stew is cooking, heat olive oil in a large pan. Add the sliced carrots and sauté over medium heat for about 10 minutes until they soften and slightly caramelize. Add the sugar, lemon juice, and 2 tablespoons of bloomed saffron. Stir gently to coat, then turn off the heat. 4. Finish the Stew:
Once the beef is fully tender, add the sautéed carrots and dried plums or prunes to the pot. Cover and let simmer on low for another 20–30 minutes. Avoid overcooking to keep the carrots intact. Chelo with Potato Tahdig:  Ingredients * 3 cups basmati rice * 1 1/2 tsp salt * 1 large potato, peeled and thinly sliced (about 1/3 inch thick) * 1 tbsp liquid saffron * 4 tbsp butter or olive oil * 1/2 cup barberries (optional, for garnish) Instructions 1. Parboil the Rice:
Bring a large pot of water to a boil. Add rice and salt. Cook on high for 6–8 minutes, until the grains are soft on the outside but still firm in the center (about 80% cooked). Drain and set aside. 2. Prepare the Tahdig Layer:
In the same pot, heat 2 tablespoons of oil with 1 tablespoon of liquid saffron over medium heat. Arrange the potato slices in a single layer on the bottom to form the crispy crust. 3. Steam the Rice:
Gently spoon the parboiled rice over the potatoes. Then cover the pot and steam on low heat for 45 minutes, or until the rice is fluffy and the tahdig is golden and crisp. 4. Optional Garnish:
