Easy Blueberry Sourdough Mini Loaves (Baking Soda Only) Prep time: 10 mins | Bake time: 20–25 mins Ingredients 1 cup (120g) all-purpose flour ½ cup (100g) granulated sugar ½ tsp baking soda ⅓ tsp salt ½ cup (120g) sourdough discard ¼ cup (60g) unsalted butter, melted (or neutral oil) 1 large egg 1 tsp vanilla extract 1–2 tbsp milk (optional, as needed) ¾ cup fresh or frozen blueberries 1 tbsp all-purpose flour (for coating berries) Instructions 1. Prep: Preheat oven to 350°F (175°C). Lightly grease 6 cups of a mini loaf pan. 2. Coat Berries: In a small bowl, toss the blueberries with 1 tbsp of flour until evenly coated. Set aside. 3. Dry Ingredients: In a bowl, whisk together the 1 cup flour, sugar, baking soda, and salt. 4. Wet Ingredients: In a separate bowl, whisk together the sourdough discard, melted butter, egg, and vanilla until smooth. 5. Combine: Pour the wet mixture into the dry ingredients. Stir gently with a spatula until just combined (do not overmix). If the batter is too thick to scoop easily, fold in 1–2 tbsp of milk. 6. Fold: Gently fold in the flour-dusted blueberries. 7. Scoop & Bake: Divide batter evenly into the 6 mini loaf cups (about ¾ full). Bake at 350°F for 20 to 25 minutes, or until a toothpick inserted into the center comes out clean. 8.
