CAJUN GARLIC BUTTER STEAK PASTA 🥩🍝🔥
Ingredients: 2½ lbs ribeye or NY strip, cut into 1¼-inch cubes; 1½ tbsp avocado oil; 4 tbsp unsalted butter, divided; 9 garlic cloves (4 smashed, 5 minced); 2 sprigs fresh thyme; 1 lb fettuccine; 1 small shallot, diced; ¾ cup low-sodium beef stock; 2 cups heavy cream; 1¼ cups freshly grated Parmesan; ½ tsp black pepper; ½ tsp smoked paprika; fresh parsley.
Homemade Cajun Seasoning: 2 tsp smoked paprika, 1½ tsp sweet paprika, 2 tsp garlic powder, 1½ tsp onion powder, 1½ tsp kosher salt, 1 tsp black pepper, 1 tsp dried oregano, 1 tsp dried thyme, ½ tsp cayenne, ½ tsp white pepper. Mix together; use about 2½ tbsp for the steak and reserve the rest for the sauce.
Instructions: Pat steak dry, toss with avocado oil and Cajun seasoning, and rest 15–20 min. Cook fettuccine 1–2 min shy of al dente and reserve 1½ cups pasta water. Heat a skillet over high heat with a little avocado oil and sear steak in batches 60–90 sec on the first side and 45–60 sec after flipping. Reduce heat and add 2 tbsp butter, smashed garlic and thyme; baste steak, then remove and rest. Don’t clean the skillet! Reduce heat to medium, add 2 tbsp butter and shallot; cook 2 min. Add minced garlic and cook 30–45 sec. Pour in beef stock, scrape up the fond and reduce 2–3 min. Reduce heat to medium-low and add heavy cream, 1–1½ tsp reserved Cajun seasoning, smoked paprika and black pepper; gently simmer 4–6 min. Turn heat LOW and gradually stir in Parmesan until smooth. Add pasta and about ¼ cup pasta water; toss until creamy, adding more pasta water as needed. Finish with a little butter if desired. Toss some steak into the pasta, pile the rest on top and pour those resting juices in too. Finish with Parmesan and parsley.
