I have 1 of the 2 genetic markers for celiac disease so I’m just 1/3 celiac. I don’t know what it is either but I know what it does to me so I avoid it!😂

Gluten is just a sticky protein that is inside of wheat. It’s not liquid. Its protein molecule makes up the structure of wheat. I have hashimotos which is an autoimmune disease that attacks the thyroid. People with this condition are told to eliminate gluten because this protein that is gluten resembles thyroid hormone so much that it signals the immune system to attack. This is called molecular mimicry. People who have celiac have a similar reaction. Their immune system attacks their digestive system due to the presence of gluten. Their small intestine can become damage if gluten is not eliminated.

@Justth3thr33ofus: Gluten is a group of proteins. It’s in wheat, rye, barley and triticale. Gluten means glue. Basically everything that is held together has gluten in it. They also use it as a thickener or in shredded cheese to keep it from sticking together. Gluten is in everything and doesn’t need to be. I didn’t know till I had to. So much respect for you to come and ask and talk about it. People just bringing it to other attention even when they don’t really know what it is helps our community so much. I wish more people asked and didn’t just make things up. ❤️

I define gluten as ummm the stuff I cannot have because I’m allergic. Please don’t ask me anything more I honestly couldn’t tell you. My only additional knowledge is I also cannot have malt and barley which I affectionally call the hidden gluten

I’ve been told by multiple friends going GF would cure all my health problems. Then I ask them to describe gluten. They also like to eat lots of gluteny foods themselves so I just ignore them now.
