@benjaminthebaker: Dark Chocolate Ganache 3 Ways Dark Chocolate Ganache (yield: 2 cups) 1 cup (227g) heavy cream* 12 ounces (340g) dark chocolate, finely chopped 1. Heat the heavy cream until it just comes to a simmer. 2. Add the chocolate to a heatproof bowl and pour approximately two thirds of the cream over top. Make sure that the chocolate is below the level of the cream and let sit for 1 minute. 3. Using a whisk, begin in the center and stir in tight circles until the ganache starts to come together. As it comes together, widen your circles and continue stirring until the ganache is an even texture. (Note: do not stir too aggressively. You are not trying to incorporate air into the ganache). 4. Add the remaining one third of the cream and repeat the whisking procedure. *sub out for water, fruit puree, or another liquid according to your taste #baking #chocolate #LearnOnTikTok
